Instructions:
- Prepare the noodles: Cook rice noodles according to package instructions until just tender. Drain and rinse with cold water to prevent sticking. Set aside.
- Prepare the tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside on a plate lined with paper towels to drain excess oil.

- Stir-fry the vegetables: In the same skillet or wok, heat the remaining 2 tablespoons of vegetable oil over medium-high heat. Add minced garlic and chopped shallot, stir-fry for 1-2 minutes until fragrant.
- Add vegetables: Add sliced red bell pepper and julienned carrot to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Combine everything: Add the cooked rice noodles and prepared sauce to the skillet. Toss everything together gently until well combined and heated through.
- Add tofu and bean sprouts: Gently fold in the cooked tofu cubes and bean sprouts. Cook for another 1-2 minutes until heated through.
- Serve: Transfer the spicy Pad Thai with tofu to serving plates. Garnish with chopped green onions and roasted peanuts. Serve immediately with lime wedges on the side for squeezing over.
