Stir Fried Chicken

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • Optional: 1 cup sliced mushrooms, 1 cup snow peas, 1 cup broccoli florets
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the thinly sliced chicken with soy sauce, oyster sauce, hoisin sauce, rice vinegar, and sugar. Mix well to coat the chicken evenly. Let it marinate for at least 15-20 minutes.
  2. Stir-Fry the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer and stir-fry for 4-5 minutes, or until cooked through and lightly browned. Remove the chicken from the skillet and set aside.

  4. Add Bell Peppers and Optional Vegetables:
    • Add the sliced red and green bell peppers (and any optional vegetables like mushrooms, snow peas, or broccoli) to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. Combine and Season:
    • Return the cooked chicken to the skillet with the vegetables. Stir everything together and cook for 1-2 minutes to heat through. Season with salt and pepper to taste.
  6. Serve:
